A typical chocolate-chip muffin at grocery stores has around 400 calories a piece approximately. Therefore, if you are someone who doesn’t want their taste buds to feel left alone but want to keep your diet healthy too, well this could be an option to satisfy your sweet tooth this holiday season.

Ingredients:

Cooked & Cooled Quinoa 2 cups
White whole wheat flour 1 cup
All-purpose flour 1 cup
Large egg 1 qty.
Packed Dark Brown Sugar ¾ cup
Baking Powder 1½ tsp.
Salt 1 tsp.
Vanilla Extract 1 tsp.
Mini Chocolate Chips ½ cup
Canola oil ¼ cup
Buttermilk ½ cup
Greek Yogurt ¼ cup

Steps:

  1. First, in a medium saucepan, get quinoa and 1 cup water to a boil. Reduce to simmer; and continue covered cooking until water has been absorbed and quinoa has become tender (10 to 12 mins.)
  2. Now preheat oven to 350º. Line a muffin tin with paper liners or spray with cooking spray. Liners proffered.
  3. Next, in a medium sized bowl, take flour, sugar, baking powder, salt, mini chocolate chips and quinoa. And beat them together.
  4. Similarly, in a small bowl, take oil, buttermilk, egg, yogurt, vanilla and whisk them together. Add the milk mixture to flour mixture and stir just until combined. Then divide among muffin cups.
  5. The baking time should be 25-30 minutes. The perfect way to understand if it is cooked can be checked by inserting a toothpick in the center of a Q’ffin and if it comes out clean, you have your Q’ffins ready.
  6. Cool muffins in the pan for 5 minutes then transfer it to another container to cool. And finally Enjoy!
