Veggie-Tofu Stir Fry Sweet and Sour

Preparation Time

Veggie-Tofu Stir Fry Sweet and Sour


Extra-firm tofu pressed and drained 14 oz.
Apple cider (or rice wine) vinegar ¼ Cup
Jalapeño pepper, seeded and minced 1 Qty.
Baby corn (or frozen corn kernels), rinsed under hot water 1 Cup
Low-sodium vegetable broth ½ Cup
Cornstarch 1 Tbsp.
Garlic, minced 2 Cloves
Canola oil 2 Tbsp.
Red bell pepper, thinly sliced 1 Qty.
Shredded napa, red, or Chinese cabbage 1 Cup
Shelled edamame (soybeans), rinsed under hot water 1 Cup
Orange (or apple) juice 2 Tbsp.
Minced fresh ginger 1 Tsp.
Green beans quartered ¼ lb.


  1. Prep-Work:
    • Take a small size bowl and mix all the liquids such as soy sauce, broth, juice, vinegar and then further mix it with cornstarch. Mix it well and then keep it on the side.
    • Next, take the tofu and pat it dry. Once dry cut it into smaller pieces as per your choice. Limiting the size to about 1 inch can help with an adequate coating of sauces around.
  2. Now take a skillet and sprinkle just a little bit of oil or you can use an oil spray if you have one. Heat it on high and add about 1 Tbsp. of oil to it. Once warm and shimmery place your tofu pieces on the skillet and brown them for about 3-4 mins on each side. Once done remove them in a plate and keep them on the side.
  3. Next, on a medium heat add another 1 Tbsp. of oil to a wok and add let it heat. Then add the veggies green beans, cabbage and red pepper and stir for about 4 minutes. Before the added veggies soften too much add jalapeno, ginger, and garlic to the wok and stir again.
  4. Further, add some soybeans and corn and let it cook for about 3 minutes. Next, lower the heat and add the broth mixture we made during the prep work steps to the wok. Let it cook till it thickens for 1-2 mins. Finally turn off the heat and the tofu pieces to the wok and mix them well with the mixture so that they are coat nicely. And voila your Veggie-Tofu Stir Fry Sweet and Sour is ready to serve.
